"Awakening Your Senses"

Awakening Your Senses through a Blind Nosing Exercise can assist new wine tasters as it is often challenging to identify the aromas in the wines you sniff. This exercise is a great way to start a wine tasting party.

You will need to prepare in advance of your guests arriving the following 10 ingredients:

1. Fresh Ground Coffee
2. Chopped Red Pepper
3. Raspberry Jam
4. Vanilla
5. Balsamic Vinegar
6. Apple Juice
7. Grapefruit Peel
8. Apricot Jam
9. Diced Fresh Pear
10. Dried Wild Mushrooms

Now, take 10 small plastic cups and place one ingredient in each glass. Cover it completely with foil, top and sides, so you can't see what is inside the cup. Number each cup. Then poke a few small holes in the foil.

When your guests arrive, and you are ready to start the exercise, hand out paper, already numbered, 1 to 10. Have your guests nose each of the ingredients and see how many they can identify by smell alone. Compare notes before you reveal the answers.

The next step is the most fun! Once you have familiarized yourselves with these common scents, open two contrasting red or white wines and put your newly sharpened senses to the test. You may not find the above aromas every time, but by concentrating the senses you'll gradually learn to identify wine's tempting aromas.

Here are a couple of suggestions for contrasting wines:

Gamay vs. Cabernet Sauvignon: Compare a light fruity red such as Gamay with a full-bodied Cabernet Sauvignon.

Oaky Chardonnay vs. Sauvignon Blanc: Compare the clean grassy and citrus tones of the Sauvignon Blanc with a rich, buttery, oaky Chardonnay.

This exercise comes from Wine 101 by the LCBO.
