How to Match Cheese and Wine We all would like to set out the right combination of the wine we choose to serve and with the cheese we offer. It appears cheeses fit into three varieties: semi-soft cheese, a goat's cheese, and a blue cheese. The stronger varieties are normally tasted last.All have different flavors and textures . Soft cheeses, such as Camembert, Brie, have a mild taste and should be paired with light white wines. Red wines with lighter tastes are also fine with soft cheeses. Serve wines that are not too cool when putting them out with cheese. Champagnes & dry sparkling wines,would line up well with some of the exotic milk cheeses. Another perspective that I like is from the American Wine Society. Their basic premise is that wine can either mirror the taste of say cheese that we serve or it can be in contrast so that there is a taste sensation that is broader in scope. I like that perspective because it allows us to experiment and determine our own preference in pairing. Any time some expert dictates the way to do something, always limits us in our creativity and under values our own taste preferences. So, get a variety of your favorite cheeses and wines and experiment away. I suggest you make notes of your discoveries and use them for future parties and for recommendations to your friends. Cheers!
