Icewine is a fairly expensive type of dessert beverage made from frozen grapes. The grapes, while frozen, at about -8 degrees C. continuously for a couple of days, are then harvested and made into a concentrated sweet nectar.
Grapes used are presently expanding in variety. The main varieties are: Riesling, Vidal and Cabernet Franc (Red Grape). Some of the new varieties include (for white wine): Seyval Blanc, Chardonnay, Kerner; (for red wine): Merlot, Pinot Noir, Cabernet Sauvignon.
The look of the Whites is a pale or shallow gold color and in the Reds can range from a pale burgundy to a pinkish tone. Their taste is often an exquisitely sweet flavor (high teens to mid-twenties). The alcohol varies between 6 and 13 percent.
The usual characteristic is a residual content ranging from 180 g/L to 320 g/L. This is a very refreshing drink due to its high acidity.
The aroma is usually fruity (peach, pears, etc.) but can be honey or caramel. An aroma of exotic fruits such as mango and pineapple are common in the whites.
There is a slightly lower alcohol content in this drink (6 to 13 percent) compared to most other types. A point of debate among the experts is whether it is better aged or fresh. Well, to weigh in on this issue, I think we should try both old and new and then decide which we like for our own all important taste.

We are aware of a couple of icewine festivals surrounding this product in Canada. The Niagara area has the Niagara Festival this year from January 18 to February 3, 2008. The Okanagan has the Festival at Sun Peaks which combines wine tasting and outdoor activities, including skiing. How cool is that for a great holiday!
